Easy Low FODMAP Grilled Salmon

Tonight’s low FODMAP supper included lemony grilled salmon, with chives and dill fresh from the garden. Foil packets of baby potatoes seasoned with garlic infused oil and parsley, along with foil packets of fresh green beans round out the meal. Fresh, easy and healthy! The fact that it was low FODMAP, gluten free, and dairy free made it safe for the whole family.

This low FODMAP grilled salmon supper in foil packets is a simple yet flavorful dish that captures the essence of summer. The foil packets help seal in the flavors and juices, resulting in tender and perfectly cooked salmon. Another bonus of this meal is the easy cleanup! Seriously, no dishes! Let the foil do that work. Enjoy this combination of grilled salmon, toasty baby potatoes, and vibrant green beans as a satisfying and tummy-friendly meal. Happy summer!

Gorgeous grilled lemon and herb salmon

Place the fish skin side down and drizzle the flesh with a touch of garlic infused oil.

Season salmon with salt and pepper, lay slices of lemons over the top and sprinkle with chopped dill, parsley and chives.

Fold the sides of the foil over the salmon, sealing the packets tightly.

In a bowl, toss the baby potatoes with 1 Tbsp of garlic infused oil, salt, and pepper, and 1 Tbsp chopped parsley.

Place seasoned baby potatoes on a foil sheet, placing them in the center of each sheet. Fold up into a little parcel.

In the same bowl, toss the green beans with the remaining tablespoon of oil, salt, and pepper.

Place the seasoned green beans in the center of a foil sheet. Drizzle with a tablespoon of water or additional lemon juice, fold up and seal tightly.

Place the salmon and potato foil packets on the preheated grill (they take longer to cook) and cook for about 15-20 minutes. Place the green bean packet on after 10 minutes, they only need about 10 minutes total. Grill until the salmon is cooked through and flakes easily with a fork. (Mine took about 25 minutes total) Potatoes take 30 total minutes to get toasty and creamy in the center.

Carefully remove the foil packets from the grill and let them cool for a few minutes.

Open the foil packets, garnish with fresh dill sprigs if desired, and serve the grilled salmon, toasty baby potatoes, and green beans hot.

Ingredients

4 salmon fillets, about 6 ounces each

1 lb baby potatoes

1 lb green beans, trimmed

2 Tbsp garlic infused oil

1 large lemon, sliced

Fresh dill, parsley, chives, chopped

Salt and pepper to taste

Instructions

Preheat your grill to medium heat. 

Cut three large pieces of heavy duty foil, each about 12×18 inches.

Place the fish skin side down and drizzle the flesh with a touch of garlic infused olive oil.

Season salmon with salt and pepper, lay slices of lemons over the top, and sprinkle with chopped dill, parsley and chives.

The green beans will be done after 10 minutes. 

Grill until the salmon is cooked through and flakes easily with a fork; approximately 25 minutes.

Grill the potatoes until they are creamy in the center; approximately 30 minutes.

Carefully remove the foil packets from the grill and let them cool for a few minutes before serving.

    • Hi! I hope you try it! Seriously, could not be any easier! And absolutely no cleanup or dishes! Change out the protein and veg.And I highly recommend adding a slice of bacon to the baby potatoes! Thanks for your support 🙂
