Quick and Easy Gluten Free Lasagna Without Ricotta

I found something magical – fresh gluten free lasagna sheets! This was worth sharing right away. One of my favorite foods on the planet is lasagna. The layers of bubbly cheese and tangy sauce baked to perfection makes me so happy. But sadly, lasagna hasn’t been seen in these parts for some time. Until today that is! I was strolling along in my grocery store when these gluten free lasagna sheets leapt out at me. I was inspired to create a delicious gluten free lasagna without ricotta that everyone in my family could enjoy.

Not your mother’s lasagna

Okay, here’s my disclaimer, this is gluten free lasagna comes together quickly, and certainly not authentically. Where’s the ricotta? Where’s the beef? Well, this can be adjusted to your families favorites. Truth be told, my kids won’t eat ricotta, nor can TQ tolerate it. So, this is our gluten free and food allergy friendly version of lasagna. Mozzarella has only small amounts of lactose, so TQ can tolerate it thankfully! A low FODMAP serving is considered 1/2 cup or less.

Give me the skinny

First, open up your fridge and look for anything that might be worthy of a quick lasagna. Tonight’s mini masterpiece featured leftover chicken that was shredded, shredded spinach, mozzarella cheese, sauce, and a little parmesan.

I used this round 2 quart dish since I wasn’t making a huge portion. Layer the bottom with a little sauce.  Layer three gluten free pasta sheets over the bottom sauce. Sprinkle on a layer of the chicken and a layer of spinach.

Next, top it with some mozzarella. Repeat the layers.

Top the whole thing with a little more sauce and sprinkle with parmesan.

Bake at 350 degrees for about 30 minutes. The lasagna didn’t take long at all to bake! Proof you can serve gluten free lasagna without ricotta on a weeknight. What do you think?

Quick and Easy Gluten Free Lasagna Without Ricotta

1 12 oz package gluten free lasagna sheets

1 jar tomato sauce

2 cups shredded chicken

1 cup chopped spinach

1 8 oz bag of mozzarella

1/2 cup grated parmesan 


Preheat oven to 350°.

Grease a 2 Qt casserole dish. 

Pour a layer of tomato sauce in the bottom of the dish. 

Add a layer of lasagna sheets, topped by chicken and spinach. 

Add a layer of mozzarella. 

Repeat adding layers: sauce, noodles, chicken, spinach, mozzarella. 

Add the final layer of noodles on the top, covered with sauce and parmesan cheese. 

Bake uncovered for 30 min.
