For the crust:

1 cup gluten free all purpose flour

1/4 cup unsalted butter, melted

1/4 cup pure maple syrup

For the filling:

1/2 cup freshly squeezed key lime juice

Zest of 2 key limes

3/4 cup lactose-free milk

2 large eggs

1/2 cup sugar

2 tablespoons gluten free all purpose flour

For garnish:

Whipped lactose-free cream

Slices of key lime

Mint sprig

Instructions

Preheat your oven to 350°F. Grease an 8×8-inch glass baking dish and set aside. Line the pan with parchment paper for easy removal.

In a mixing bowl, combine the gluten free all purpose flour, melted butter, and maple syrup for the crust. Stir until well combined and press the mixture evenly into the bottom of the prepared baking dish. Bake the crust for 10-12 minutes or until lightly golden. Remove from the oven and let it cool while preparing the filling.

In a separate mixing bowl, whisk together the key lime juice, key lime zest, lactose-free milk, eggs, sugar, and gluten free all purpose flour for the filling until smooth and well incorporated.

Pour the filling mixture over the cooled crust, spreading it evenly. Place the baking dish back into the oven and bake for approximately 20-25 minutes or until the filling is set.

Once baked, remove the Key Lime Bars from the oven and allow them to cool completely in the baking dish. Refrigerate for at least 2 hours to allow them to fully set.

Before serving, garnish the bars with whipped lactose-free cream and slices of key lime and a mint sprig for an extra touch of flavor and presentation.

Cut into desired-sized bars and serve cold.

Notes:

Additionally, a crust can be made with crushed gluten free vanilla cookies. Like these Kinnikinnick Gluten-Free Vanilla Wafer Cookies.

  • 1 1/2 cups gluten-free cookie crumbs
  • 1/4 cup melted butter (lactose-free if needed)
  • 2 tablespoons maple syrup

Follow the same directions as above, but reduce the baking time for the crust to 8-10 minutes.

Finally, it really makes a difference to use key limes rather than the regular limes from the supermarket. Key limes are smaller, tangier and a more fragrant. If however you can not find key limes (they are seasonal) bottled key lime juice can work. I have used Nellie and Joes Key West Lime Juice. It’s readily available in most stores. I will however, add the zest of a couple of limes to the filling because I like the green flecks.
