Ingredients

1 pound boneless, skinless chicken breasts, cut into cubes

2 tablespoons garlic infused oil

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh herbs (such as rosemary, thyme, or oregano)

Salt and pepper to taste

Instructions

In a bowl, combine the garlic infused oil, lemon juice, chopped herbs, salt, and pepper.

Add the chicken cubes to the marinade and toss until evenly coated. Let it marinate in the refrigerator for at least 30 minutes.

Preheat the grill to medium-high heat. Thread the chicken onto skewers.

Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred.

Remove from the grill and let them rest for a few minutes before serving.

Ingredients

1 cup lactose-free Greek yogurt*

2 tablespoons chopped fresh herbs (such as basil, chives, or parsley, green onion tops, dill, cilantro, oregano)

1 tablespoon lemon juice

Zest of a small lemon

1 tablespoon garlic infused oil

Salt and pepper to taste

Instructions

In a small bowl, combine the yogurt/mayo (or combo), chopped herbs, lemon zest/ juice, and garlic-infused olive oil.

Mix well until all the ingredients are thoroughly incorporated.

Season with salt and pepper to taste.

Refrigerate the dip for at least 30 minutes to allow the flavors to meld together.

Serve alongside your grilled chicken skewers as a creamy and flavorful dip.

Notes

 *Feel free to substitute with any dairy free plain yogurt, or mayonnaise, to suit your dietary needs.
