Low FODMAP Taco Pasta Bake

This summer I asked the kids each to make a meal one night per week. My ultimate goal is to teach the kids some kitchen skills so when they leave the nest they aren’t clueless. But, to my surprise, they have have definite opinions and ideas – and both kids just “made up” their own recipes! So cool! This recipe is a winner from TQ. It’s his cheesy low FODMAP taco pasta bake. (I’ll have to share MK’s shrimp pasta too, it was magical) The kids learned how to cook and mom was happy to have dinner on the table! Let’s get back to the gluten free cheesy taco pasta bake!

This can be whipped up in about 30 minutes so it’s perfect for a weeknight meal. The beef is browned, and any excess fat is drained off. Dump in the seasoning, salsa, and cooked noodles. Toss in the cheese and layer it in a baking dish, top with a little extra cheese and  pop in the oven. Since it is already cooked, the casserole only needs to warm through and bubble up.

The fun part is topping the low FODMAP taco pasta bake! We used crushed tortilla chips, cilantro, tomatoes, green onions, and avocado for me. But, you could add sour cream (if tolerated), nacho flavored chips, guacamole, more cheese, or lettuce! Everyone can create their own masterpiece! Enjoy!

Low FODMAP Cheesy Taco Pasta Bake

1 lb ground sirloin

3 Tb low FODMAP taco seasoning

1 cup low FODMAP salsa

12 ounce gluten free pasta, rotini recommended

1 1/2 cups shredded lactose free cheddar cheese 

Ground pepper to taste

Optional toppings: chopped tomato, cilantro, avocado, crushed tortilla chips


Preheat oven to 350°.

Bring large pot of water to boil and cook pasta according to package directions.

Preheat large skillet over medium heat.

Add ground beef, season with pepper.

Cook until no pink is left.

Drain any excess fat.

Stir in taco seasoning, salsa, add a little water (start with 1/2 cup) to distribute spices evenly.

Simmer 5 minutes.

Turn off heat and toss in cooked noodles.

Add 1 cup of cheese and stir.

Transfer to 9×13 baking dish that was sprayed with non-stick spray.

Top with remaining cheese.

Bake at 350° for 15 minutes, or until cheese is melted and casserole heated through.

Serve and top with any additional toppings desired and enjoy.

    • Mmmmm! A greek version would be fantastic! We love oregano and MK love feta – this is something we’ll have to think about. Let me know if you have any brainstorms!
